Week in Review Family Meals

I love doing these reviews as it gives you links to all of the recipes I made for the week in one spot. So did you miss any of my family meal posts from the last week? Once again, never fear, as I will give you quick links to them and you too can make some fun family meals this week. My top two would be the Macadamia and White Chocolate Chunk Cookies and the Roasted Turkey Calzones, were so loved that the ingredients for another batch is already in the fridge!

Family Meals For The Week

I had coffee with a friend this morning and she is busier than she has ever been and she has three kids.....sounds like me.  She struggles to get meals on the table when everyone is eating at different times.  I shared with her a few easy recipes and I thought why not share with you too.  All of these have been posted on my blog before, but here they are in one place!  Most of these can be adapted to be put in the crock pot in the morning so that you will have a hot meal for everyone no matter when they walk through the door!

Potato Soup

INGREDIENTS:

  • 4-5 potatoes
  • onion
  • stick of butter
  • block of cream cheese (or two)
  • Can of cream of chicken soup
  • Can of cream of celery soup
  • Shredded cheese
  • Chopped cooked bacon
DIRECTIONS:

1. Fill the pot with water and add the potatoes, salt, pepper and onion. Boil till potatoes are soft and some of the water is boiled down. DO not drain.

2. Add one stick of butter, one block of cream cheese, and both cans of soup.

3. Heat and serve. Add shredded cheese or bacon on top. If it gets too thick, just add milk

Crock pot Pasta Fagiole

INGREDIENTS:

  • 2 tablespoons (2 turns around the pan) extra-virgin olive oil
  • 1/8 pound (about 3 slices) pancetta, chopped (my store was out so I used Italian sausage instead)2 (4 to 6-inch) sprigs rosemary, left intact
  • 1 (4 to 6-inch) sprig thyme with several sprigs on it, left intact
  • 1 large fresh bay leaf or 2 dried bay leaves
  • 1 medium onion, finely chopped
  • 1 small carrot, finely chopped
  • 1 rib celery, finely chopped
  • 4 large cloves garlic, chopped
  • Coarse salt and pepper
  • 2 (15 ounce) cans cannellini beans
  • 1 cup canned tomato sauce or canned crushed tomatoes (use a good brand like San Marzano)
  • 2 cups water
  • 1 quart chicken stock
  • 1 1/2 cups ditalini (I used a low carb elbow noodle)
  • Grated Parmigiano or Romano, for the table
  • Crusty bread, for mopping
DIRECTIONS:

  1. Heat a deep pot over medium high heat and add oil and pancetta. Brown the pancetta bits lightly, and add herb stems, bay leaf, chopped vegetables, and garlic. Season vegetables with salt and pepper. Add beans, tomato sauce, water, and stock to pot and raise heat to high.
  2. Bring soup to a rapid boil and add pasta. Reduce heat to medium and cook soup, stirring occasionally, 6 to 8 minutes or until pasta is cooked al dente. Rosemary and thyme leaves will separate from stems as soup cooks.
  3. Remove herb stems and bay leaf from soup and place pot on table on a trivet.
  4. Let soup rest and begin to cool for a few minutes. Ladle soup into bowls and top with lots of grated cheese. Pass crusty bread for bowl mopping.
(To turn this into a crock pot meal, I add everything to the crockpot except the noodles. I have the noodles cooked ahead of time so when you are ready to have a bowl of soup, ladle the soup in a bowl and top with cooked noodles, stir to heat up noodles.  You can also brown up some Italian sausage and put in the soup as well to give it a bit more protein)

French Dip Sandwiches

INGREDIENTS:

  • 4 to 6-lb beef roast any cut
  • 1 can beef consommé
  • 1 can water
  • 1 pkg Italian dressing mix (dry)
  • 1 pkg au jus mix (dry)
DIRECTIONS:

  1. Place all ingredients in a slow cooker and cook all day (8-10 hours) on low. Pull meat apart and place on hoagie buns and dip in juice

Cheeseburger Soup

INGREDIENTS:

  • 1 lb ground beef
  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cup diced celery
  • 4 TBS butter or margarine
  • 3 cups chicken broth
  • 4 cups diced peeled potatoes
  • 1/4 cup flour
  • 8 ounces American cheese
  • 1-1/2 cups milk
  • salt and pepper to taste
  • 1/4 sour cream
DIRECTIONS:
  1. Brown ground beef in 3 qt. saucepan;drain and set aside. In same saucepan saute onion,carrots and celery in 1 TBS butter until vegetables are tender.
  2. Add broth, potatoes and beef: bring to boil. Reduce heat: cover and simmer for 10-12 minutes until potatoes are tender. Meanwhile in small skillet melt remaining butter. Add flour cook and stir 3 minutes or until bubbly. Add to soup, bring to boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk,salt and pepper. Cook and stir until cheese is melted. Remove from heat blend in sour cream.

Slow Cooker Sweet Potatoes

INGREDIENTS:

  •  6 medium sweet potatoes or yams (2 pounds), peeled and cut into 1-inch cubes
  • 1 1/2 cup applesauce
  • 2/3 cup packed brown sugar
  • 3 tablespoons butter or margarine, melted
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped nuts, toasted
DIRECTIONS:

  1. Place sweet potatoes in 2 to 3 1/2-quart slow cooker. Mix remaining ingredients except nuts; spoon over potatoes.
  2. Cover and cook on low heat setting 6 to 8 hours or until potatoes are very tender.
  3. Meanwhile, cook nuts in ungreased heavy skillet over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown and fragrant; set aside. Sprinkle nuts over sweet potatoes

White Bean and Chicken Chili

INGREDIENTS

  • 5-6 cups white beans
  • 1 T. minced garlic
  • 1 T. olive oil
  • 2 tsp. ground cumin
  • 4 cups chopped chicken, cooked
  • 1-2 cups chicken broth
  • 2 cups chopped onion
  • 4 oz. chopped green chilies
  • 2 tsp. dried oregano
  • Dash cayenne pepper
DIRECTIONS:

  1. Place beans and chicken broth in a large pot.
  2. Sauté in sauce pan; garlic and onions till soft then add chilies and seasoning mix then add to bean pot. Next add cooked chicken. Cook on low for 2 hours.
  3. Garnish with shredded cheese, sour cream and green onion
